The pastry is somewhat similar to current London online favourites Flor. More softness to it compared to those from a traditional french patisserie (which I have a preference for).
Queen A (Kouign-Amann)

Karamellisierten croissant teig und meersalz (caramelized croissant dough and sea-salt)
I like the caramelization on top. Would’ve loved to try it fresh out of the oven. Suspect it’d be more buttery then.
If you go back roughly 116 weeks. Or about two years and two months on Albatross’s Instagram feed you can see a variation that is visually more buttery. I’m hoping the buttery caramel drenched right through inside the pastry. Again would be interesting to taste the difference from then till the current version.
Kardamom Zopf (Cardamom braid)

Croissant teig und kardamom (croissant dough and cardamom)
There was a slight hint of cardamom in this. Not over powering.
Would return and definitely re-order the Queen A.
